Hearty Garden Vegetable Soup
Ingredients
2 large onions, chopped
2 green peppers, chopped
2 cans of tomatoes (15 oz each), chopped or crushed
1 bunch of celery, chopped
1 head of cabbage, chopped
3 carrots, chopped
1 package of mushrooms, sliced
1–2 vegetable stock cubes (optional)
6–8 cups water or vegetable cocktail (like V8)
Salt and pepper, to taste
Optional: hot sauce, herbs, or spices for extra flavor
Instructions
1️⃣ Prep the Vegetables
Chop all vegetables into bite-sized cubes.
2️⃣ Sauté Aromatics
In a large pot, sauté the onions over medium heat until soft and fragrant (about 5 minutes).
3️⃣ Combine & Simmer
Add the green peppers, celery, carrots, mushrooms, cabbage, and canned tomatoes to the pot.
Pour in 6–8 cups of water or vegetable cocktail.
Add stock cubes if using.
4️⃣ Cook Until Tender
Bring the soup to a boil, then reduce to medium heat.
Simmer uncovered for 30–45 minutes until all vegetables are tender.
