Peach Cobbler Pudding (Warm, Creamy & Comforting Dessert)

Preparation

Step 1: Prepare the Peaches

Preheat oven to 350°F (175°C). In a bowl, combine sliced peaches, sugar, vanilla extract, cinnamon, nutmeg, and cornstarch. Stir until peaches are evenly coated. Spread the mixture evenly in a greased 9×13-inch baking dish.

Step 2: Make the Batter

In a separate bowl, whisk together flour, sugar, baking powder, and salt. Add milk and melted butter, whisking until smooth and lump-free.

Step 3: Assemble the Pudding

Carefully pour the batter over the peaches. Do not stir. The batter will rise and settle as it bakes, creating the pudding-like texture.

Step 4: Bake

Bake uncovered for 45–55 minutes, or until the top is lightly golden and the edges are bubbling. The center should look soft and slightly custardy.

Step 5: Rest Before Serving

Remove from oven and let rest for 10–15 minutes. This allows the pudding to thicken slightly while staying creamy.

Variations

Peach Vanilla Pudding: Add vanilla bean paste to the batter.

Peach Bourbon Pudding: Add a splash of bourbon to the peach mixture.

Peach Blueberry Pudding: Add fresh blueberries for a fruity twist.

Spiced Peach Pudding: Add cloves or ginger for deeper warmth.

Gluten-Free Version: Use a 1:1 gluten-free flour blend.

Cooking Notes

Do not stir after assembling—this is key to the pudding texture.

Fresh peaches should be ripe but firm.

If using canned peaches, drain well to avoid excess liquid.

The dessert will firm slightly as it cools but remain soft inside.

Serving Suggestions

Serve Peach Cobbler Pudding warm with vanilla ice cream, whipped cream, or a drizzle of heavy cream. It’s perfect as a cozy dessert after dinner, for Sunday meals, or holiday gatherings. This pudding is meant to be spooned generously into bowls.

Tips

Place baking dish on a foil-lined sheet to catch spills.

Taste peaches first and adjust sugar if needed.

Let rest before serving for best consistency.

Store leftovers covered in the refrigerator.
