Prepare the Filling: In a pan, sauté the chopped onions with a little oil until translucent. Add the ground beef and cook until browned. Season with salt, pepper, and paprika. Once cooked, let it cool slightly and stir in the fresh parsley and green onions.
Prepare the Sauce: In a small bowl, whisk together the yogurt, oil, and egg until smooth.
Assemble the Roll:
Lay one sheet of phyllo dough on a flat surface. Brush it lightly with the yogurt sauce.
Place another sheet on top and repeat until you have 3-4 layers.
Spread the cooked ground beef mixture evenly over the top sheet (as seen in your photo).
Sprinkle a generous layer of shredded cheese over the meat.
Roll and Bake:
Carefully roll the dough tightly into a long log.
Brush the top of the roll with the remaining sauce or a beaten egg yolk for a golden finish.
Place on a baking sheet lined with parchment paper.
Bake in a preheated oven at 350°F (180°C) for about 25-30 minutes, or until the crust is golden brown and crispy.
Serve: Let it rest for 5 minutes, then slice into thick pieces. Garnish with more fresh herbs if desired.
