Ingredients for Fresh Pasta:
- 300 g all-purpose flour (or pasta flour, like durum wheat semolina)
- 3 eggs
- A pinch of salt
How to Prepare Fresh Pasta:
- Prepare the flour:
On a clean work surface (or in a bowl), make a well with the flour. Create a hole in the center where you will add the eggs. - Add the eggs:
Crack the eggs into the well and add a pinch of salt. Use a fork to beat the eggs, gradually incorporating the flour from the outer edges. Continue mixing until the eggs are fully incorporated. - Knead the dough:
Once the dough starts coming together, use your hands to knead it. Work the dough for about 10 minutes until it becomes smooth and elastic.
If the dough is too sticky, add a little flour—but don’t overdo it.
If the dough is too dry, add a few drops of water.
